Vegan “Tuna” Sandwich
I’ve been asking myself all day what I want to make for my lunches this week and something I haven’t had in forever came to mind…
A vegan “tuna” sandwich!
This was a recipe I found a few years back from Fork Over Knives. I fell in love with the taste and knew that it would be a staple for me. Sadly I lost the recipe a couple of years ago, so it’s been a while since I made it. I just found it the other day going through old documents on my computer! Needless to say, I’m going to make it this week.
You can choose to follow the recipe that Fork Over Knives has, but I made a couple of modifications based on my taste preferences. Mostly I find the Tahini dressing makes the “tuna” salad a little dry, so I like to add in more pickles and capers for some juiciness.
Ingredients
1 (15 ounce can chickpeas, rinsed and drained; or 15 ounces of raw chickpeas (make sure to soak them before use when using raw)
3 tablespoons Tahini
1 teaspoon Dijon or spicy brown mustard. (I added a second teaspoon because I like the taste of Dijon)
1 tablespoon maple syrup
1/4 cup diced red onion
1/4 cup diced celery, about 1 stalk
1/4 cup diced pickle, about 2 slices (I used 3 😊 )
1 teaspoon capers, drained and loosely chopped
Healthy pinch each sea salt and black pepper
1 tablespoon roasted unsalted sunflower seeds (optional)
Instructions
Place the chickpeas in a mixing bowl and mash with a fork, leaving a few beans whole. You can also put them in a food processor for quick and easy mashing.
Add the Tahini, Dijon mustard, maple syrup, red onion, celery, pickle, capers, salt, pepper, and sunflower seeds (if you’re using them). Mix together and adjust to taste. This is where I add more pickles and Dijon to my liking. You could also add in some pickle juice for more of a pickely flavor ;-p.
Serve right away on your choice of bread, romaine or butter lettuce, or crackers; or let it marinate in the fridge overnight. I prefer the second option to allow the flavors to merge together, but it is certainly delicious either way. Add any desired toppings, such as sprouts, onions, or tomatoes to enhance.
